How to Prepare

Thawing:

  • Thaw overnight in the refrigerator, or place vacuum-sealed bag under cold running water for 20–30 minutes.
  • Pat dry before cooking for best results.

Steamed (Recommended — Cantonese Style):

  1. Score the fish on both sides and place on a heatproof plate with sliced ginger.
  2. Steam over high heat for 10–12 minutes until flesh is opaque and flakes easily.
  3. Discard excess liquid, top with julienned ginger and green onion.
  4. Pour hot oil over the fish, then drizzle with light soy sauce and sesame oil to finish.

Pan Fried:

  1. Season fish with salt and white pepper.
  2. Heat oil in a pan over medium-high heat.
