Steaming (recommended): Clean and halve the crabs, then steam over boiling water for 12–15 minutes until the shells turn bright orange-red and the meat is cooked through — the simplest way to enjoy their natural sweetness.
Stir-frying: Clean, chop, and stir-fry with ginger, scallions, and your favourite sauce (black bean, salted egg yolk, or chili) over high heat for 8–10 minutes until cooked through and fragrant.
Braising: Braise in a rich soy, ginger, and Shaoxing wine sauce for a deeply flavourful, comforting dish.
Hot Pot: Add cleaned crab pieces to a simmering broth and cook for 8–10 minutes — the crab infuses the broth with an incredible sweetness.
